Chef Frédéric Collin, who took over from Sébastien Hervé, offers a delicious cuisine based on regional products, the seasons, and local flavours – and in perfect harmony with the surroundings. This local boy took his first steps at the side of great starred Parisian chefs such as Philippe Braun (Restaurant Laurent) and Christian Le Squer (Restaurant Ledoyen), before returning to the Loire Valley and starting to climb the ladder.
After 3 good years spent at the Abbaye de St-Ambroix in Bourges, Frédéric Collin established himself at the Château de Noizay, to offer us new gourmet interludes. Try one, in either of the two rooms at the restaurant, where you will also find real courtesy and a wide selection of Loire wines.
